Ingredients for 4 servings:

  • 175 g sugar
  • 4 egg yolks
  • 1 tbsp vanilla sugar
  • 400 g cream
  • 400 g strawberries

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

Whisk the egg yolks with sugar and vanilla sugar until frothy. Bring the cream to a boil and fold it into the egg mixture, stirring constantly. Whisk the mixture in a double boiler until creamy. Cover and chill. Rinse the strawberries with cold water, drain well, pat dry, and remove any blossoms. Reserve a few pieces of fruit for garnish, then blend the rest with a hand blender and fold into the cooled cream. Freeze to set. Spoon the mixture into dessert bowls using an ice cream scoop and serve with whole strawberries and, if desired, ice cream biscuits.
