Roast pork with pineapple

Ingredients for 4 servings:

  • 300 g pork (schnitzel or fillet)
  • 8 button mushrooms or other mushrooms
  • 150 g pineapple
  • ½ tsp ginger, grated or ginger powder
  • 2 onions (spring onions) or 1 small leek
  • 1 small chili pepper(s), red, pitted
  • 2 garlic cloves
  • 2 tbsp soy sauce
  • 2 tbsp chicken broth
  • 1 small can/s of bamboo shoot(s)
  • 1 pinch(s) of sugar
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the meat into thin strips. Finely chop the garlic. Halve or eighth the mushrooms, depending on their size. Cut the pineapple into chunks, finely slice the ginger, and finely chop the spring onions and chili. Heat the oil and fry the garlic until golden brown. Add the meat and mushrooms, then add the remaining ingredients one at a time. Stir everything over high heat until the meat is cooked. Season with salt, pepper, and a little sugar. Serve with rice.
