Vanilla croissant with blood oranges

Ingredients for 4 servings:

  • 6 eggs
  • 1 tbsp flour
  • 1 tbsp cornstarch
  • 250 g quark
  • 4 tbsp sugar
  • 300 g biscuits (leftover or broken vanilla crescents)
  • 4 tbsp butter
  • 4 oranges (blood oranges)
  • 1 tbsp honey
  • Powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the eggs. Beat the egg whites with the sugar until stiff. Whisk the egg yolks with the flour, cornstarch, and quark until smooth. Crumble the vanilla crescents slightly and stir in, then fold in the beaten egg whites. Melt the butter in a non-stick pan, pour in the mixture, and bake at 195°C for 15 minutes. Meanwhile, fillet the blood oranges, reserving the juice, and sweeten both with honey. Remove the Schmarren from the oven, break it up with a fork, sprinkle with sugar, and serve with the oranges.
