Lamb's lettuce with pears and blue cheese

Ingredients for 2 servings:

  • 200 g lamb’s lettuce
  • 2 bulb(s), large
  • 120 g blue cheese, chilled
  • 1 tbsp vinegar
  • 2 tbsp oil (hazelnut oil)
  • Salt
  • pepper

Instructions

Prepare the lamb’s lettuce, trimming the ends of the small bunches and washing and drying the leaves several times. Peel and quarter the pears. Remove the core and cores. Cut each quarter into very thin slices. Cut the cheese into small cubes. Divide the lamb’s lettuce among four plates and place two sliced ​​pear quarters on each. Garnish with the cheese cubes. Season generously with pepper (especially the pears). Mix the vinegar, oil, and a pinch of salt in a bowl. Pour this sauce onto the plates and serve immediately.
