Salmon fillet with feta cheese

Ingredients for 4 servings:

  • 150 g cherry tomatoes
  • 4 spring onions
  • 4 cloves garlic
  • 200 g sheep’s cheese
  • 4 salmon fillets
  • 2 tbsp lemon juice
  • 1 tbsp oil (olive oil)
  • ½ bunch thyme
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fish cooked in foil

Peel and quarter the tomatoes. Wash the spring onions and slice into rings. Peel and roughly chop the garlic. Roughly crumble the feta cheese. Mix everything together. Preheat oven to 200°C. Rinse the fish fillets with cold water, pat dry, and drizzle with lemon juice. Season with salt and pepper. Grease one side of the aluminum foil with olive oil. Rinse the thyme and shake dry. Place each fillet individually on a piece of foil. Spread the cheese and vegetable mixture on top and top with the thyme sprigs. Fold the foil over and seal the edges tightly. Bake in a hot oven on the middle rack at 200°C for about 30-35 minutes. This goes best with warmed ciabatta and a dry white wine.
