Ham noodles with vegetables

Ingredients for 4 servings:

  • 500 g pasta (e.g. spiral pasta)
  • 2 tbsp oil
  • 200 g bacon, diced
  • 2 onions, finely diced
  • 2 garlic cloves, chopped
  • 1 red bell pepper(s), cut into strips
  • 2 tomatoes, blanched, skinned, pitted, cut into strips
  • 1 bunch of spring onions, cut into rings
  • 3 tbsp chives, fresh or dried
  • 2 eggs, whisked
  • 100 g cheese, grated or finely diced (e.g. medium-aged Gouda)
  • salt and pepper

Working time approx. 25 minutes; Total time approx. 25 minutes

A particularly delicious version with egg, vegetables and cheese

Cook the pasta until al dente. Heat oil in a large pan and sear the bacon. Fry the onion, garlic, and bell pepper. Toward the end of the cooking time, add the tomatoes, spring onions, and chives and fry for another 1-2 minutes. Add the pasta to the pan and heat briefly again with the other ingredients. Then turn off the heat (residual heat is sufficient), fold in the eggs and cheese, and let set or melt, stirring occasionally. Season with salt and pepper. A little tomato ketchup goes perfectly with the ham pasta.
