Cook the noodles according to the package instructions until al dente. In the meantime, dice the sausage and cheese (if you bought the cheese from a block), wash the leek thoroughly, and slice it into rings. If you time it right, the noodles are now ready. This means you can use the same heat. Heat a large, high-sided frying pan or wok and add the oil. Add the leek and briefly fry with the sausage, seasoning lightly with salt. Stir in the noodles and continue frying briefly over low heat. Sprinkle the cheese over the top and let it melt. Grind on a generous amount of fresh pepper.
