Ingredients for 1 servings:

  • 120 g butter
  • 120 g powdered sugar
  • 1 tsp vanilla flavor
  • 1 egg(s), separated
  • 1 egg yolk
  • 175 g flour
  • ¼ tsp baking powder

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Simple French butter cookies

Put the butter in a bowl and beat until soft. Then sift the icing sugar over it and beat until light and fluffy. Beat in the egg yolks, one at a time, then add the vanilla extract. Sift the flour and baking powder into the butter mixture and mix to form a dough. Briefly knead on a floured surface until smooth. Wrap in cling film and let rest in the refrigerator for 1 hour. Preheat oven to 190°C. Grease 2 baking sheets or line with baking paper. Roll out the dough to 1/2 cm thick on a floured surface and cut out 5 cm circles (or other shapes). Place on the sheets. Lightly beat the egg whites. Using the back of a knife or a fork, score a crisscross pattern on the tops of the cookies. Brush with egg whites, then bake for 15 minutes until golden brown. Makes approx. 25 cookies.
