Ingredients for 25 servings:
- 190 g sugar
- 3 eggs
- 75 ml milk
- 240 g flour
- ½ tsp baking powder (about 6 g)
- 90 g butter
- Butter-vanilla flavoring or lemon flavoring
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Combine the sugar, vanilla or lemon flavoring, and half the milk with the whole eggs and beat until fluffy. Combine the sifted flour and baking powder and slowly add, whisking continuously. Add the remaining milk. Stir in the warm, melted butter. Pour the batter into the madeleine molds and let rest for a few minutes. Bake on the bottom rack of the oven for about 15 minutes at 200-220 degrees Celsius (top/bottom heat). After baking, immediately remove from the mold and let cool on a wire rack. The madeleines can be stored in a tin for several days.
