Ingredients for 1 servings:

  • 3 eggs
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 200 ml oil
  • 500 g flour
  • 1 lemon(s), untreated, grated peel
  • 2 tbsp milk
  • 1 packet of baking powder
  • 150 g butter
  • 5 tbsp powdered sugar
  • 1 packet of vanilla sugar
  • 1 tbsp cocoa powder
  • 1 tbsp rum, or rum flavoring
  • 1 pack of food coloring, red
  • Sugar

Instructions

Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Beat the eggs with the sugar and vanilla sugar until frothy, then add the oil drop by drop. Add the flour and lemon zest. Dissolve the baking powder in the milk and add it. Knead the dough on a floured surface and form it into a log. Cut off equal pieces, shape them into balls, and place them on a baking sheet lined with baking paper. Bake in a preheated oven at 180 degrees Celsius for about 15 minutes until light golden brown. Carefully hollow out the flat sides of the cooled hemispheres with a sharp knife. For the cream, moisten the remaining cookies with rum. Beat the butter, powdered sugar, vanilla sugar, and cocoa until frothy, then stir in the crumb mixture a spoonful at a time. Fill two cookies at a time with cream and sandwich them together. Dilute the red food coloring with water and dip the peaches on both sides first in the coloring and then in the sugar. The peaches look more realistic when decorated with mint leaves.
