Smoked matjes in tomato salad

Ingredients for 2 servings:

  • 5 tomatoes (Roma tomatoes)
  • ½ bunch of spring onions
  • 2 onions, white
  • 4 matjes fillet(s), (smoked matjes)
  • 5 m.-large mushrooms, brown
  • 125 g ham (fat ham), diced
  • 4 tbsp balsamic vinegar, lighter
  • 2 tbsp mustard
  • 2 tbsp apple syrup (alternatively honey or maple syrup)
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and slice the tomatoes. Place them on two large plates, slightly overlapping them. Finely slice both onions. Brush the mushrooms dry, slice them thinly, and cut the herring into strips. Fry the bacon in a pan until crispy, then add the white onion rings for 3 minutes. Reduce the heat and stir in the mushrooms. Let them cook for a few minutes, then remove the contents of the pan with a slotted spoon and transfer to a medium-sized bowl. Leave the cooking liquid in the pan and mix with the balsamic vinegar, mustard, apple syrup, pepper, and salt. Add the herring strips and spring onions to the bowl, toss everything gently, and divide the salad evenly among the tomato-lined plates. Drizzle with the sauce and serve.
