Green bean tuna salad

Ingredients for 4 servings:

  • 750 g beans (young green beans)
  • 500 g carrot(s), finely chopped
  • 2 cans of mushrooms, sliced, 170 g drained weight
  • 2 cans of tuna in oil, 140g drained weight
  • 6 m.-large cucumber(s), (pickles), optional, cut into strips
  • salt and pepper
  • Parsley

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cut the beans into approximately 2-3 cm pieces, boil, and chill. Cut the carrots into small sticks, boil, and chill. Mix all ingredients. Season with salt and pepper, and sprinkle with parsley.
