Apple cinnamon cake with American brown sugar
Preheat oven to 180 degrees Celsius (top/bottom heat). Grease the baking pan. Mix the cinnamon and brown sugar in a bowl. Peel the apples and cut them into small pieces. The size depends on your taste; some people like larger pieces, others grate the apples finely, then set aside. Cream the white sugar and butter with a mixer until creamy, beat in the eggs one at a time, then add the vanilla extract. Mix the flour with the baking powder and sift it into the butter mixture, mixing well. Stir in the milk in small portions. The batter shouldn’t be too thick, roughly like marble cake; you may need to add a little more milk. Pour half of the batter into the baking pan, spread half of the apples and half of the sugar-cinnamon mixture on top, then divide the remaining ingredients into the baking pan in the same order. Use a fork or teaspoon to scrunch the batter up a bit to mix the ingredients together. Similar to marble cake. Bake for approximately 60 minutes, maybe longer; a toothpick helps you test whether the batter is done. It usually takes about 15 minutes longer for me, but that’s probably due to the oven. When the batter is done, remove the pan from the oven and let it cool completely on a wire rack. Mix the powdered sugar with the milk or cream to create a very thick glaze. Then carefully remove the cake from the pan and decorate with the glaze using a fork. Serve.
