Golden peach muffins

Ingredients for 1 servings:

  • 50 g butter
  • 75 g sugar
  • 3 drops of lemon flavor (lemon baking oil)
  • ½ packet of vanilla sugar
  • 2 eggs
  • 125 g flour
  • ½ tsp, leveled baking powder
  • 1 can/n peach(s)
  • 100 g flour, maybe a little more
  • 75 g sugar
  • 75 g butter
  • 1 tbsp vanilla sugar
  • powdered sugar
  • lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

For the batter, cream the butter until smooth. Gradually stir in the sugar, vanilla sugar, eggs, salt, and cooking oil. Sift the flour with the baking powder and stir in a tablespoon at a time. Pour the batter into greased baking dishes. For the topping, drain the peaches, slice them, and place them on top of the batter. Put the flour in a bowl, mix with the sugar and vanilla sugar. Add the butter in small pieces and mix everything with your hands or two forks until crumbly. Spread the crumble on the peaches. Place the muffins in the oven preheated to 175°C and bake for 15-20 minutes. For the icing, sift the icing sugar and mix it with the lemon juice until smooth and thick. Immediately after baking, spoon this icing over the muffins using a brush or teaspoon.
