Grilled Jalapeno Poppers

Ingredients for 16 servings:

  • 110 g goat cheese, soft
  • 110 g cream cheese, soft
  • 50 g Parmesan, freshly grated
  • 1 m.-large tomato(s), pitted, cut into small cubes
  • 1 ½ spring onions, cut into thin rings
  • 2 tbsp sage, fresh, chopped
  • ½ tsp salt
  • 16 chili peppers (jalapenos), halved lengthwise, pitted
  • 2 tbsp fresh coriander, chopped
  • Fat, for the tray

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Grilled Pepper Poppers

Preheat the grill in the oven. Lightly grease the baking sheet. In a bowl, mix the ingredients, from goat cheese to salt, thoroughly. Add 2 teaspoons of the mixture to each jalapeno half and place them cheese-side up on the baking sheet. Place the baking sheet in the oven, about 7 to 8 cm from the grill bars. Grill the jalapenos for 5 minutes; they should be lightly browned, and the cheese should be lightly browned. Arrange the jalapenos on a platter and garnish with cilantro.
