Omelette sandwich Indian style

Ingredients for 1 servings:

  • 2 eggs
  • 1 dash of cream or milk
  • 1 pinch(s) harissa powder or cayenne pepper
  • 1 pinch(s) coriander powder or fresh coriander
  • 1 pinch(s) cumin powder
  • 1 pinch(s) garam masala
  • 1 pinch of salt
  • 2 slices of sandwich toast
  • 1 slice(s) Cheddar cheese
  • 1 tomato(s)
  • 1 tbsp apricot jam
  • 1 tsp mayonnaise
  • 1 pinch(s) curry powder
  • 1 shot of oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 hours 10 minutes; Total time approx. 10 hours 15 minutes

Whisk the two eggs in a bowl with the cream or milk. Then stir in the chili, coriander, cumin, garam masala, and salt. Heat a large 28cm frying pan on the stove with a little oil. Quickly spread the beaten egg mixture in the pan and briefly coat the two slices of toast in the egg mixture on both sides, then fry them side by side in the pan. In the meantime, mix the apricot jam with the mayonnaise and curry powder. Then thinly slice the tomato. As soon as the egg mixture has set, turn the omelet and the slices of toast on top. Then spread the apricot jam mixture on top of one of the two slices of toast, top with the slice of cheddar cheese, and then arrange the tomato slices on top. Now fold the round omelet, with the overhanging sides, onto the two slices of toast and then fold one slice of toast without any topping onto the other slice of toast with the topping. Then briefly fry on both sides again and serve.
