Ingredients for 1 servings:

  • 3 eggs
  • 3 small tomatoes
  • 1 large onion(s)
  • ½ bunch fresh coriander (alternatively parsley)
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the onion, slice it into rings, and fry it in hot oil in a pan until light brown. Then add the diced tomatoes and coarsely chopped coriander leaves, and season with salt. Sauté for 10 minutes, until the tomatoes are soft. Beat the eggs and pour them over the mixture. Stir, then let the egg set over medium heat. Stir frequently to prevent it from burning. Grind the pepper over the top before serving. This is a traditional breakfast in Colombia. The coriander leaves can also be substituted with parsley.
