Son-in-law – Eggs

Ingredients for 4 servings:

  • 8 eggs, hard-boiled
  • 2 tbsp oil
  • 2 tbsp palm sugar or brown sugar
  • 1 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 1 tsp red chili pepper(s), finely chopped
  • 25 g chopped coriander leaves

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the oil in a wok (or a skillet) and fry the eggs over medium heat, turning frequently. When they are golden brown and bubbly, remove and keep warm. Drain any excess oil from the wok. Then add the sugar, fish sauce, tamarind paste, and chili and bring to a boil. Cook for 2 minutes, until the mixture becomes syrupy. Pour the syrup over the eggs and sprinkle with coriander. Serve with a green salad and/or white bread.
