Ingredients for 4 servings:
- 500 g flour
- 1 packet of dry yeast
- 3 tbsp milk
- 1 tsp sugar
- 250 ml water
- ½ tsp salt
- 4 tbsp oil
- 2 cups of crème fraîche
- 1 cup of cream
- salt and pepper
- 1 pack of bacon, diced
- 2 onions
- 2 packs of cooked ham
- 1 stalk(s) leek
- 1 pack of cheese, grated
- nutmeg
- Vegetable broth, granulated
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
For the dough, knead together the flour, dried yeast, milk, sugar, salt, and oil. Add enough water until the dough starts to pull away from the bowl. Knead again by hand, cover, and let rise in a warm place for about 1 hour. For the topping, mix the crème fraîche and cream. Season with salt, pepper, nutmeg, and granulated stock. Finely slice the onions and leeks. Dice the ham. Weigh the dough into 100g portions and roll each out thinly on a floured surface. Place on a baking sheet lined with baking paper and spread the dough flats with the cream – not too thickly. Then top with bacon, onions, and cheese, or with ham, leeks, and cheese, as desired. Preheat the oven to the highest setting. Baking time: about 10 minutes, or 5-6 minutes in a wood-fired oven. Tip: In autumn, we serve this with new wine.
