Blackberry waffles with pistachio honey cream

Ingredients for 8 servings:

  • 100 g cane sugar
  • 3 eggs
  • 1 tbsp syrup, (elderberry syrup)
  • 200 ml milk
  • 60 g butter, melted
  • 300 g flour
  • 2 tsp baking powder
  • 1 pinch of salt
  • 200 g blackberries, as small as possible
  • 25 g chopped pistachios
  • 80 g honey (forest honey)
  • 120 g crème fraîche

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Vigorously mix the sugar with the eggs, syrup, milk, and butter. Then fold in the flour mixed with the baking powder and salt. Let the batter rest for about half an hour. Heat the waffle iron. Chop the blackberries into smaller pieces if you don’t want all of them in the batter and stir them into the batter. Set a few blackberries aside for garnish. Grease the waffle iron well and bake 8 waffles. The blackberries can stick to the batter a little. For the pistachio honey cream, mix the crème fraîche and honey with a mixer and stir in the pistachios. Serve the waffles while still warm, garnished with the blackberries and cream.
