Albanian spinach stew

Ingredients for 4 servings:

  • 1 large onion(s), diced
  • 3 garlic cloves, finely chopped
  • 3 tbsp oil or clarified butter
  • 500 g minced meat
  • Broth, granulated
  • pepper
  • 1 carrot(s)
  • 300 g spinach, fresh or frozen
  • 80 g rice
  • 4 cups of yogurt (full-fat yogurt)
  • Paprika powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely dice the onion and garlic cloves and brown in oil or clarified butter. Add the minced meat and fry until brisket browned. Season well with granulated stock, pepper, and paprika. Stir in the grated carrot and spinach (if using fresh spinach, cut it into wide strips), add enough water to cover, and bring to a boil. Add the rice and simmer over low heat until tender but still grainy. Add more water if necessary. Mix the piping-hot food in the bowl with 1 cup of full-fat yogurt per person. Serve with fresh white bread.
