Macedonian beef stew

Ingredients for 4 servings:

  • 2 cups rice
  • 400 g beef, cut into pieces
  • 4 carrots, diced
  • 3 kohlrabi, diced
  • 1 clove(s) garlic, finely chopped
  • 1 jar olives, pitted
  • 100 g dates, chopped
  • some oil for frying
  • 1 tsp honey
  • salt and pepper
  • Cayenne pepper
  • lots of paprika powder, sweet and hot
  • 2 cups broth

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 40 minutes

Stew with vegetables, rice and meat, takes some time

Cut the beef into equal-sized pieces, chop the garlic or press it through a garlic press, and add both ingredients to a pot with hot oil. Add the honey and fry everything until crisp. Pour in the broth and simmer gently for an hour. Then add the diced carrots and kohlrabi. Meanwhile, boil 2 cups of rice with a little salt and 4 cups of water. After about 20 minutes, add the cooked rice to the stew, then add the chopped dates and pitted olives. Season with salt, pepper, cayenne pepper, and plenty of paprika.
