Ingredients for 4 servings:

  • 500 g minced meat (mixed minced meat)
  • 1 onion(s), finely chopped
  • 2 garlic cloves
  • 1 egg(s)
  • 120 g rice, raw
  • 1 small rib, smoked
  • salt and pepper
  • Paprika powder, sweet and hot
  • 2 packs of sauerkraut
  • 1 white cabbage (pickled whole)

Working time approx. 45 minutes; Rest period approx. 1 day; Total time approx. 1 day 45 minutes

Cabbage rolls, cabbage rolls with pickled white cabbage

The thick stalk at the end of the cabbage leaves is carefully removed. (If you can’t get hold of pickled cabbage, you can cook regular cabbage in salt and vinegar water until almost cooked. Braunschweiger cabbage is best for this.) The minced meat is mixed with salt, pepper, paprika, onion, crushed garlic, rice and the egg. The cabbage leaves are then filled with the mixture and wrapped. In a fairly wide dish, first place a layer of sauerkraut, then layer the roulades tightly together. Finally, another layer of sauerkraut and the smoked spare ribs. Pour over water and simmer gently on a low heat for at least 2 hours. It is best to prepare the whole thing the day before and refrigerate overnight. The roulades are best heated in the oven in a small casserole dish with a little sauce and served with the cabbage.
