Ingredients for 4 servings:
- 1 kg apples, e.g. Delicious
- ¼ liter of water
- ¼ liter dry white wine
- 4 tsp lemon juice
- 3 egg whites
- 125 g sugar
- ½ vanilla pod(s), scraped pulp
- 1 packet of vanilla sugar
- ½ tsp cinnamon
- 1 tbsp rum
- 200 ml cream
- 1 tbsp sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Wash, peel, and core the apples. Combine the water, sugar, wine, and 2 teaspoons of lemon juice in a saucepan and bring the apples to a boil. Remove from the pan, let cool slightly, and then strain or puree. Chill completely in the refrigerator. Beat the egg whites with 2 teaspoons of lemon juice, the vanilla pulp, vanilla sugar, and sugar until stiff peaks form. Gradually add the cold apple puree, cinnamon, and rum, whisking vigorously until the mixture is fluffy and glossy. Serve well chilled in glasses and garnish with whipped cream.
