Plum dumplings
Peel the potatoes and boil them with a pinch of salt. When they are tender, transfer them to a bowl and mash them. Then let them cool down so that they can be kneaded by hand. Gradually add enough flour (or potato flour) until the dough no longer sticks when kneaded. Form them into palm-sized dumplings. Press half or a whole pitted plum (depending on the size) into each dumpling and then enclose them in the dough. Bring a large pot of water to a boil and simmer the dumplings gently (about 10-15 minutes). When the dumplings float to the top, they are done. It would be nice if they were left to sit in the hot water (but not boiling) for a few more minutes. Melt the butter and mix the sugar with the cinnamon. Remove the dumplings from the water and serve with melted butter, sugar, and cinnamon.
