Plum dumplings

Ingredients for 2 servings:

  • 400 g floury potatoes
  • 30 g butter, liquid
  • 2 egg yolks
  • 3 tbsp flour
  • 2 tbsp wheat semolina
  • 6 plums
  • 6 sugar cubes
  • 50 g butter
  • 50 g breadcrumbs
  • Salt
  • Sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Boil the potatoes until soft, peel them, and press them through a ricer while they are still warm. Mix them with melted butter, egg yolk, flour, a pinch of salt, and semolina to form a firm dough. Let the dough rest for a few minutes, then test the cooking time and add a little more flour if the mixture doesn’t hold together well. Cut open the plums, remove the stones, and replace each with a cube of sugar. Form the dough into plum-sized balls, flatten them, wrap the plums in them, and roll the dough into dumplings. Place the dumplings in boiling water and simmer for about 10 minutes. In the meantime, melt the butter, add the breadcrumbs, and season with sugar to taste. Remove the dumplings from the water, drain well, serve, and pour the buttered breadcrumbs over them.
