Ingredients for 4 servings:
- 300 g chicken breast fillet(s), sliced
- 2 tsp flour for turning
- 200 ml peanut oil or corn oil
- 4 red, dried chili peppers, chopped 1 cm
- 1 tbsp garlic, chopped
- 10 spring onions, white part only, cut into 5 cm pieces
- 50 g cashew nuts, unsalted, roasted
- 50 g onion(s), sliced
- 2 tbsp oyster sauce
- 1 tbsp soy sauce, light
- 1 tbsp sugar
- ¼ tsp soy sauce, dark
Instructions

Coat the meat thinly with flour. Heat the oil in a pan or wok and fry the meat for about 5 minutes until lightly browned. Pour the remaining oil from the pan. Add the chilies and garlic to the meat and fry for 1 minute. Add all the remaining ingredients and fry for about 3 more minutes. Serve immediately. Serve with rice on the side.
