Roasted chicken breast with green peppers

Ingredients for 4 servings:

  • 50 ml oil (peanut or corn oil)
  • 1 tbsp garlic, chopped
  • 300 g chicken breast fillet(s), cut lengthwise into 1 cm thick slices
  • 150 g bell pepper(s), green, cut into strips
  • 5 chili peppers, red, fresh, cut lengthwise into strips
  • 75 g onion(s), cut into thick slices
  • 1 tbsp oyster sauce
  • ½ tbsp Soy sauce, light
  • 1 tsp fish sauce
  • ½ tsp soy sauce, dark
  • 15 g basil, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Kai Phad Phrik (original Thai recipe)

Heat the oil in a wok or frying pan. Sauté the garlic and meat for 1 minute. Add the bell pepper and chili pepper and mix. Then add the onion and fry for 1 minute. Stir in the remaining ingredients one at a time, frying each for about 30 seconds. Once the basil is stirred in, immediately remove the wok from the heat. Arrange on plates and serve immediately. Serve with rice on the side.
