Fried chicken breast with cashew nuts

Ingredients for 4 servings:

  • 300 g chicken breast fillet(s), sliced
  • 2 tsp flour for turning
  • 200 ml peanut oil or corn oil
  • 4 red, dried chili peppers, chopped 1 cm
  • 1 tbsp garlic, chopped
  • 10 spring onions, white part only, cut into 5 cm pieces
  • 50 g cashew nuts, unsalted, roasted
  • 50 g onion(s), sliced
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce, light
  • 1 tbsp sugar
  • ¼ tsp soy sauce, dark

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Coat the meat thinly with flour. Heat the oil in a pan or wok and fry the meat for about 5 minutes until lightly browned. Pour the remaining oil from the pan. Add the chilies and garlic to the meat and fry for 1 minute. Add all the remaining ingredients and fry for about 3 more minutes. Serve immediately. Serve with rice on the side.
