Couscous salad with feta cheese, cucumber and tomato

Ingredients for 4 servings:

  • 200 g couscous
  • 1 small onion(s)
  • 2 tbsp olive oil
  • 6 tbsp tomato paste
  • 1 bunch mint, fresh
  • 1 bunch of parsley
  • 1 small cucumber(s)
  • 200 g cocktail tomatoes
  • 200 g sheep’s cheese
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Allow the couscous to swell according to the package instructions. Stir thoroughly every now and then to prevent lumps from forming. In the meantime, finely dice the onion and sauté it in the olive oil. Then combine the onion with the tomato paste and season with salt and pepper. Finely chop the mint and parsley, deseed and dice the cucumber, quarter the cherry tomatoes, and finely crumble the feta cheese. Combine everything with the couscous and season again to taste.
