Ingredients for 4 servings:

  • 1 can of tuna
  • 2 anchovy fillets
  • 2 tomatoes
  • 1 handful of beans – seeds, young, cooked
  • 1 cucumber(s)
  • 1 egg(s), hard-boiled
  • Olives, pitted black
  • 1 tbsp mustard (coarse Dijon mustard)
  • 2 tbsp olive oil
  • 1 cup of yogurt
  • 1 lemon(s), the juice
  • ½ tbsp vinegar (red wine vinegar)
  • salt and pepper

Nicoise salad

Tear the tuna into pieces and finely chop the anchovy fillets. Quarter the tomatoes; do not slice them. Place them together in a bowl. Add the bean kernels, the washed and sliced ​​cucumber, and the quartered hard-boiled eggs. Add the olives. Serve with the salad dressing made from the above ingredients.
