Ingredients for 4 servings:
- 1 can of tuna
- 2 anchovy fillets
- 2 tomatoes
- 1 handful of beans – seeds, young, cooked
- 1 cucumber(s)
- 1 egg(s), hard-boiled
- Olives, pitted black
- 1 tbsp mustard (coarse Dijon mustard)
- 2 tbsp olive oil
- 1 cup of yogurt
- 1 lemon(s), the juice
- ½ tbsp vinegar (red wine vinegar)
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Nicoise salad
Tear the tuna into pieces and finely chop the anchovy fillets. Quarter the tomatoes; do not slice them. Place them together in a bowl. Add the bean kernels, the washed and sliced cucumber, and the quartered hard-boiled eggs. Add the olives. Serve with the salad dressing made from the above ingredients.
