Ingredients for 5 servings:

  • 800 g potatoes, peeled
  • 250 g quark (Margerquark, fresh firmer)
  • 2 eggs
  • 2 egg yolks
  • 70 g sugar
  • 100 g currants
  • Salt
  • 100 g butter or lard
  • Sugar, fine
  • 1 lemon(s), grated
  • Cinnamon
  • nutmeg

Working time approx. 20 minutes; Total time approx. 20 minutes

Saxon specialty

Boil the potatoes, drain, steam thoroughly, press quickly through a sieve or hand press, and immediately mix with the pressed quark, eggs, egg yolks, sugar, and currants. Season with salt, lemon zest, a pinch of cinnamon, and grated nutmeg. Form the mixture into small patties; allow two for each serving. Fry the patties slowly in butter or lard until golden brown and serve sprinkled with caster sugar.
