Swabian potato salad

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 cube of meat broth
  • 1 onion(s)
  • pepper
  • Salt
  • 3 tbsp oil
  • 4 tbsp vinegar
  • n. B. herbs for the salad
  • e.g. water, hot
  • 1 pinch(s) of sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash 1 kg of potatoes and bring to a boil with water. Simmer for approx. 20 to 25 minutes, then drain. Peel and slice the potatoes. Pour the warm meat broth (dissolve stock cubes in hot water and bring to a boil briefly) over the potato slices. Dice 1 small onion, add to the potatoes, and season with pepper. For the salad dressing, mix 3 tablespoons of oil, about 4 tablespoons of vinegar, salt, and a pinch of sugar. Stir in any salad herbs and season to taste. Mix the potatoes with the salad dressing and let stand for approx. 30 minutes before serving. Variation: Slice a cucumber and add to the salad.
