Ingredients for 2 servings:
- 1 onion(s)
- 2 chicken breasts
- 1 bell pepper(s), green
- 3 tomatoes
- 1 tsp vegetable broth
- 1 tsp curry
- 500 ml coconut milk
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Dice the onion and fry in oil. Cut the meat into small pieces and fry it. Chop the peppers and tomatoes and add them to the pan. Add the vegetable stock, curry, and coconut milk and simmer on low heat for 10 minutes. Serve with rice!
