Banoffee muffins with coconut topping

Ingredients for 1 servings:

  • 3 bananas, overripe
  • 120 g butter, melted
  • 80 g brown sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 60 g yogurt
  • 275 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 130 g chocolate, toffee (with caramel filling)
  • 75 g cream cheese
  • 75 g desiccated coconut

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Mash the bananas in a bowl. Stir in the melted butter, sugar, eggs, and yogurt. In another bowl, combine the flour, baking powder, and salt. Stir half of the flour mixture into the banana mixture. Then fold in the chopped chocolate and the remaining flour mixture. Pour the batter into a muffin tin. For the topping, combine the cream cheese and desiccated coconut and spread it on the muffins. Bake at 175°C in the lower third of the oven for about 25-30 minutes.
