Muffins basic recipe

Ingredients for 12 servings:

  • 120 g flour (wholemeal flour)
  • 140 g flour (type 405)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp spice(s) of your choice (e.g. vanilla, cinnamon)
  • 60 g nuts, chopped or raisins, dried fruit, chocolate chips, etc.
  • 250 g fruit (fresh or from a can)
  • 1 egg(s)
  • 140 g brown sugar
  • 80 ml vegetable oil, or 125 grams soft butter or margarine
  • 280 g buttermilk, milk, yogurt or sour cream
  • Fat, for the baking pan or 12 paper baking cups

With this recipe, gelatin muffins are quick and easy!!!

Per piece approx. 210 kcal 5 g protein/8 g fat/32 g carbohydrates Preheat the oven to 180 degrees Celsius. Grease the cavity of a muffin tin or place 12 paper baking cases on a baking sheet. Put both types of flour in a bowl and mix with baking powder, baking soda, your choice of spices and the nuts, raisins, etc. Clean the fresh fruit and cut it into small pieces. Drain the canned fruit and also cut it into small pieces. Lightly beat the egg in another bowl. Then add the sugar, fat or oil and dairy product and mix well. Stir in the flour mixture. Finally, carefully fold in the fruit. Immediately pour the batter into the cavity of the tin or the paper baking cases. Bake in the oven (center, fan oven 160 degrees Celsius) for 20-25 minutes until golden brown. Let the muffins rest for about 5 minutes after baking and then serve while still warm. TIP: Baking soda is available in larger supermarkets and pharmacies. If you can’t find it, simply substitute the specified amount with baking powder!
