Ingredients for 1 servings:

  • 1 half onion(s), red
  • 1 half bell pepper(s), green
  • 1 carrot(s)
  • 3 eggs
  • 5 m.-sized potatoes
  • some salt
  • Sunflower oil
  • Chili powder, optional
  • Tomato ketchup, optional

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Dice the onion and bell pepper. Grate the carrot. Peel the potatoes and cut them into “chips.” Fry the potatoes in sunflower oil until lightly browned. Remove the “chips” (potatoes) from the hot fat and drain. In a small pan, evenly distribute the chips, diced onion and bell pepper, and grated carrot and fry briefly. Immediately pour the beaten eggs over them to form an omelet. Wait until the egg sets and turns slightly brown, then flip it (preferably with a plate, as it might break otherwise). Sprinkle on some coarse salt, and if you like it spicier, add chili powder. It tastes especially good with a little tomato ketchup. Tip: You can also simply use ready-made chips if you’re short on time (but don’t let them get too crispy). Of course, they won’t taste as great as homemade ones!
