Ingredients for 1 servings:
- 2 small eggs
- some cabbage
- some onion(s)
- some tomatoes
- some coriander
- some chili, optional
- ½ cup flour
- ½ cup whole wheat flour
- ¼ tsp sea salt
- some water, hot
- Ghee or butter, for spreading
- Oil for frying
Instructions

Breakfast wrap from Uganda
The chapati: Mix flour and wholemeal flour with salt and a little hot water to form a ball. Cover the dough with a damp cloth and let it rest for 1 hour. Divide the dough and roll it out flat. Heat vegetable oil, add the flatbread, and brush with ghee or regular butter. Fry the flatbreads on both sides. To prepare the Rolex: Mix the filling ingredients in a cup. Heat the oil in a pan. Pour the mixture into the pan, smooth it out, and let it set. When the first bottom side is lightly browned, turn it over. Remove the mixture and keep warm. Briefly heat the chapati again on both sides in the pan and remove it. Place the Rolex mixture on the chapati and roll it up tightly. If you like, wrap everything in a love letter, a bill, or newspaper—authentic as in Uganda—and serve. Greaseproof paper or baking paper will also work. Uganda’s “Rolex” is a must-have breakfast item, found on every street corner in Uganda. It’s called “Rolex,” derived from rolled eggs.
