Potato and herring salad

Ingredients for 4 servings:

  • 8 fish fillets (matjes)
  • 500 g potatoes
  • 300 g onion(s)
  • 2 apples, approx. 300 g
  • 200 g pickled gherkins (dill pickles, jar)
  • 5 tbsp vinegar (herb vinegar)
  • Salt
  • 1 tsp sugar
  • 5 tbsp oil
  • 1 bunch of dill
  • 100 g crabs (deep-sea crabs)
  • Pepper, white
  • some cucumber juice

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

If necessary, soak the herring for about 3 hours. Wash the potatoes with their skins on and boil for about 30 minutes. Then peel and let cool. Peel, quarter, and core the onions. Wash, quarter, and core the apples. Finely chop the herring, drained dill pickles, onions, and apples. Dice the potatoes and mix them in a bowl with a little of the pickle juice. Mix the herb vinegar, salt, pepper, sugar, and oil. Mix the prepared ingredients into the potatoes. Finely chop the dill and add. Cover the salad and let it marinate well. Just before serving, stir in the prawns.
