Colorful potato salad

Ingredients for 4 servings:

  • 500 g boiled potatoes
  • 3 eggs, hard-boiled
  • 1 cucumber(s)
  • 1 bunch of spring onions
  • 3 apples
  • 1 bunch of radishes
  • 1 bunch of dill
  • 1 bunch of parsley
  • 300 ml yogurt or sour cream
  • 2 egg yolks
  • salt and pepper
  • 2 tsp mustard
  • Vinegar

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Peel the potatoes and cut into slices or cubes. Wash the cucumber, halve it, remove the seeds, and cut it into small cubes with the skin on. Peel the eggs and cut them into eighths. Wash the apples, spring onions, and radishes and chop them into salad-sized pieces. Mix everything together. Stir in finely chopped herbs, yogurt (or cream), egg yolk, salt, pepper, mustard, and vinegar to make a sauce. Season to taste and gently stir into the salad. Must marinate for at least 3 hours.
