Fleurons are half-moon-shaped, baked, unsweetened puff pastry pieces that are served with fricassee or light ragùs. However, they are most often used to garnish dishes, both hot and cold. Preheat oven to 180°C – 200°C fan/convection oven. Thaw the puff pastry halfway, cut out half-moon shapes (makes about 18) and place them on a baking sheet lined with baking foil or parchment paper. Brush with beaten egg and bake for about 15 minutes.
