  • 120 g powdered sugar

French macaroons

Preheat the oven to 180°C. Break the chocolate into pieces and melt carefully. Mix 80g of the icing sugar with the almonds and then add the melted chocolate. Beat the egg whites with the salt until stiff peaks form, gradually adding the remaining sugar until the egg whites are glossy. Add to the chocolate batter. It should then be slightly crumbly. Using a teaspoon, place small heaps on a greased baking sheet and bake the macarons for 10-12 minutes. Then remove from the baking sheet and let cool. Beat the softened butter until fluffy, add the cocoa powder and continue beating until a smooth cream forms. Cut the macarons in half crosswise with a sharp knife, spread the cream on top, and put the cookies back together.
