Tunisian tagine with potatoes and chicken breast

Ingredients for 4 servings:

  • 2 large potatoes
  • ½ onion(s)
  • 2 chicken breasts
  • 50 ml oil
  • 1 tsp salt
  • pepper
  • 1 tsp turmeric
  • 8 eggs
  • e.g. chopped parsley
  • 200 g cheese, grated
  • ½ tbsp baking powder
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Dice the potatoes, onions, and chicken breast. Fry in oil, then add a little water and simmer. Add salt, pepper, and turmeric. When the potatoes are cooked through, remove from the heat and let cool slightly. Then fold in the eggs, parsley, and cheese and pour into a greased dish. Mix in 1/2 teaspoon of baking powder. Bake in a preheated oven at 200°C (top/bottom heat) for about 20 minutes.
