Creamy pumpkin gnocchi

Ingredients for 3 servings:

  • 1 pack of gnocchi, from the refrigerated section, approx. 500 g
  • 1 large onion(s)
  • 2 garlic cloves
  • 250 g cherry tomatoes
  • 400 g butternut squash
  • 75 g diced ham, e.g., South Tyrolean speck
  • 1 shot of white wine
  • 2 tbsp olive oil
  • 1 tsp spice mix (carbonara spice)
  • 1 tsp salt, e.g. sea salt
  • 150 g cream cheese
  • e.g. basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Preheat the oven to 200°C (top/bottom heat). Wash the tomatoes. Peel, deseed, and finely dice the pumpkin. Peel, quarter, and slice the onion. Peel the garlic and roughly chop or press it. Place the vegetables, gnocchi, and diced ham in a dish. Mix everything with a generous splash of white wine, olive oil, and seasoning. Make a well in the center, add the cream cheese, and bake for about 40 minutes. Finally, add the basil and mix all ingredients well, lightly crushing the tomatoes. Note: Alternatively, you can use onion granules, garlic granules, tomato salt, pepper, nutmeg, chili, and chives for the carbonara seasoning.
