Ingredients for 8 servings:

  • 1 kg minced meat
  • 1 large onion(s)
  • 100 g raisins
  • 50 g almonds, sliced
  • 2 tbsp apricot jam
  • 2 tbsp chutney (fruit chutney)
  • 1 slice(s) white bread
  • 3 eggs
  • ¼ liter of milk
  • 25 ml lemon juice
  • 2 tsp turmeric
  • 3 tsp curry (preferably homemade)
  • 2 bay leaves (original: lemon tree leaf)
  • 3 tbsp oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bobotie

Soak the bread in 125 ml of milk, squeeze out excess moisture, peel the onion, and finely chop. Knead the bread into the meat. Add all the other ingredients except the eggs, milk, oil, and bay leaves, and knead well. Sear in hot oil until crisp, adding the bay leaves and allowing to brown well. Transfer everything to a sufficiently large, buttered, ovenproof bowl. Whisk the eggs in the milk, pour over the meat mixture (do not overmix), and bake in the oven at 180°C for about 50 minutes. (The egg-milk mixture should be firm.)
