Spicy sausage salad

Ingredients for 4 servings:

  • 500 g meat sausage, cut into strips
  • 200 g cheese (Gouda), cut into strips
  • 2 onions
  • 2 bell peppers, red and yellow
  • ½ cucumber(s)
  • 1 jar green pitted olives (potted weight: 65 g)
  • 1 class can/n corn kernels (drained weight: 140 g)
  • 1 tbsp mustard, medium hot
  • 4 tbsp vinegar
  • Salt
  • 4 tbsp vegetable broth (instant)
  • 4 tbsp oil
  • ½ bunch parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the onion. Halve, trim, deseed, and wash the bell pepper. Dice the bell pepper and onion. Wash and trim the cucumber, quarter it lengthwise, and cut it into 1/2-inch pieces with the skin on. Halve the olives and mix them with the drained corn, onions, bell pepper, cucumber, and cheese and sausage strips in a large bowl. Mix the mustard with salt, vinegar, broth, and oil to a smooth sauce and dress the salad. Wash the parsley, shake dry, pick off the leaves, and chop. Stir into the salad before serving.
