Ingredients for 4 servings:
- 600 g chicken breast
- 2 tbsp soy sauce (sweet, preferably Indonesian)
- 1 tbsp soy sauce (light)
- 2 tbsp sesame oil
- ½ tsp tamarind paste
- 1 tbsp water
- 1 tsp pepper (black, freshly ground)
- 2 small onions
- 3 tbsp oil
- 250 g peanuts (roasted)
- 3 garlic cloves
- 3 kaffir lime leaves (fresh)
- 160 ml water
- 1 ½ tsp sambal oelek
- 1 lemon(s) , (juice)
- 6 tbsp soy sauce (sweet)
- ½ tsp salt
- ¼ tsp pepper (black, freshly ground)
- ¼ tsp sugar
Instructions

marinated chicken skewers with peanut sauce
Cut the meat into cubes (approx. 2 x 2 cm). Dissolve the tamarind paste in 1 tablespoon of hot water, stir in the remaining marinade ingredients. Fold in the meat and let it chill for 2 hours. Thread the meat cubes onto skewers (soaked wooden skewers for a garden grill or the metal skewers of an electric rotisserie). Preheat the oven to 80°C. Finely dice the onions and sauté in an ovenproof pan with 2 tablespoons of oil until golden brown. Place the pan in the oven and roast until crispy, turning occasionally. Mash the peanuts in batches (e.g., in a coffee grinder with a grinder mechanism), although larger pieces may still be present. Finely chop the garlic and lemon leaves and sauté lightly in 1 tablespoon of oil. Pour in the water, add the sambal oelek, sugar, soy sauce, and peanut butter. Simmer over low heat until creamy, stirring occasionally. Add the lemon juice, salt, and pepper, and season to taste. Finally, stir in the fried onions. I’m sure you haven’t forgotten to cook rice and grill the skewers in the meantime, so it’s ready to serve! Notes: Instead of grilling, you can also simply fry the meat cubes in the marinade in a pan. Most of the ingredients can be found in Asian stores, e.g. lemon leaves (which you can also freeze, by the way). Fried onions: I always make larger quantities; they keep in a jar for several months. I’ve listed the ingredients as I consider them optimal, but you can also swap out many of them: Tamarind paste – grated rind of an unpeeled lemon. Peanuts – ready-made peanut butter. Onions – store-bought fried onions. Light soy sauce – regular soy sauce. Sweet soy sauce – regular soy sauce, simmered briefly with brown sugar. Sesame oil – regular olive oil. Sambal oelek – 2 small chili peppers, finely chopped.
