Leek with spicy peanut sauce

Ingredients for 4 servings:

  • 1 kg leek
  • 20 g butter
  • Salt
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 tbsp oil
  • 5 tbsp peanut butter
  • 200 ml coconut milk, unsweetened
  • 1 ½ tbsp soy sauce, sweet
  • Sambal Oelek, 1-2 tsp
  • ½ lemon(s), juice
  • 1 egg yolk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim and thoroughly wash the leeks, then slice them. Sauté them in hot butter in a saucepan. Add 1/8 liter of water and a pinch of salt, and cook in a covered pan over low heat for ten minutes. Peel and finely dice the onion and garlic. Sauté in the oil, add the peanut butter and coconut milk, and bring to a boil, stirring constantly. Season with soy sauce, sambal oelek (spicy), and lemon juice. Stir in the egg yolk; do not boil. Pour the sauce over the cooked leeks.
