Satay – skewers with peanut sauce

Ingredients for 6 servings:

  • 500 g chicken breast
  • 1 garlic clove(s), finely chopped
  • 1 onion(s), finely chopped
  • 2 tbsp brown sugar
  • 2 tbsp fish sauce
  • 4 tbsp vegetable oil (peanut oil)
  • 120 g peanut butter, with coarse pieces
  • 200 ml coconut cream
  • 2 tbsp chili sauce, sweet
  • 1 tsp lemongrass, ground
  • Oil for frying

Instructions

Working time approx. 35 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 35 minutes

Cut the chicken breast into 2 cm wide strips and thread them accordion-style onto wooden skewers. Place them in a deep plate. Place the garlic, onion, half each of the sugars, and the fish sauce in a blender; blend into a paste, then thin slightly with cold water. Pour this paste over the meat and cover with cling film. Marinate for about 3-4 hours. Place the remaining ingredients in a saucepan over medium heat and simmer for about 4 minutes until a thick sauce forms. Brush the meat skewers with oil and grill them on a hot wood grill or in a hot pan until browned, brushing them with oil occasionally. Arrange the finished skewers in a fan shape on a platter and serve the sauce in a small bowl. One more note on the quantities: this makes about 12 skewers. Depending on whether you’re serving them as a starter or main course, more or fewer people can eat from this.
